Whiskey Tea Brack

Whiskey Tea Brack is an easy to prepare dessert and especially tasty with butter. Parts of the preparation needs to be done the previous day.


  • 225g Raisins
  • 225g Sultanas
  • 225g Soft Brown Sugar
  • 0.5 teaspoon Cinamon
  • 2 tablespoons Whiskey
  • 275ml Strong Tea
  • 450g self-raising Flour
  • 2 Eggs (beaten)
  • Honey (to glaze)
  • Demerara Sugar (to dust)


Preparation the day before
Place the sultanas, raisins, sugar, cinnamon, nutmeg, whiskey and tea in a large bowl and soak overnight.
Preheat oven to 160C, grease 20cm/8cm baking tin. Stir into the mixture flour and eggs and mix well. Bake for approximately 1 hour.
Towards end of baking
Towards the end of baking time, brush with honey and sprinkle with Demerara sugar.
When cold, slice and butter generously.
